Raspberry & Coconut Gummie Squares

Who said getting extra protein had to be boring? Not us, and not with these easy to make Raspberry & Coconut Gummi (or jelly) Squares. Incorporating the goodness of gelatin and all of the yumminess of raspberries and coconut, this GPA Wholefoods recipe will have everyone asking for more. And, you’ll know they are getting all the benefits of gelatin.

Raspberry & Coconut Gummie Squares

Makes 30 Prep: 10 mins (+ 4 hours in fridge) Cooking: 10 mins

For the first layer:
2 tbs lime juice
1 tbs water
¼ cup gelatin
400ml can coconut cream
1 tsp lime zest

For the second layer:
2 tbs lemon juice
½ cup water
¼ cup gelatin
250g frozen raspberries
1 tbs honey

Place the lime juice and water in a small bowl Sprinkle over the gelatin and soak for 5 minutes. Place mixture in a small saucepan and gently heat while stirring until the gelatin dissolves. Remove from heat. Slowly add the coconut cream while stirring. Stir through lime zest. Pour mixture into an18cm x 18cm cake tin or plastic container. Place in fridge for 2 hours or until set.

For the second layer:
Place the lemon juice and water into a small bowl. Sprinkle over the gelatin and soak for 5 minutes. Place raspberries in a small saucepan and gently heat. Add gelatin and stir until dissolved. Remove from heat. Add honey and let mixture cool, but not set. Pour mixture over the first layer of coconut. Place in fridge for 2 hours or until set.

Remove from dish and cut into small squares.
