Raspberry & Coconut GummY SQUARES

 

These easy-to-make Raspberry & Coconut Gummy Squares incorporate the healing goodness of gelatin with the yumminess of raspberries and coconut. As you can see, they’re fun little treats everyone will enjoy, especially kids! Thankfully, they are also wonderfully nutrient-rich.

Method

The first layer

  1. Place 1/3 cup water in a small saucepan, sprinkle the gelatin on top and soak for 5 minutes.

  2. Pour the coconut milk and 100ml water into a measuring jug so you have a total of 500ml liquid.

  3. Add the vanilla extract and stir to combine. Set aside.

  4. Go back to the small saucepan with the water/gelatin mix, place on a stove stop and turn the heat on to medium.

  5. Stir until the gelatin dissolves completely (no gritty bits).

  6. Remove from heat and pour the gelatin/water into the coconut cream.

  7. Grease a glass container or baking tray (roughly 18cm x 18cm) and pour the mixture in

  8. Place in the fridge for 2 hours or until firmly set

The second layer

  1. Place 1/4 cup water in a small saucepan, sprinkle the gelatin on top and soak for 5 minutes.

  2. Place raspberries and 1/3 cup water in a small saucepan and gently heat until the raspberries are broken up and the mixture is warm.

  3. Add gelatin mixture and stir until dissolved

  4. Remove from heat. At this point, if you want your top layer smooth, you can blend it before pouring over the coconut.

  5. Allow the raspberry/gelatin mix to cool to room temperature.

  6. Pour the mixture over the first layer of coconut

  7. Place in fridge for 2 hours or until firmly set

  8. Remove from the container and cut into small squares to serve.

  9. Store in the fridge
