Recipe for delicious & nutritious salmon patties

You're going to love this very simple and super scrumptious recipe for salmon patties. They're easy to make, delicious and thankfully, nutrient rich. Salmon is one of the the most nutritious foods available, with a long list of health benefits including; 

  • Rich in omega 3 fatty acids
  • Great source of protein 
  • High in B vitamins 
  • Good source of potassium 

These salmon patties are gluten free, dairy free and low FODMAP. And they have a really nice flavour, that even non seafood lovers (like me!) can enjoy them.  They are perfect to serve with a side of fermented veggies, freshly diced tomato and avocado, or make a delicious salmon burger for Sunday lunch. 

Ingredients

  • 415g tinned Alaskan salmon
  • 2 eggs
  • 50g almond meal
  • 2 tablespoons parsley, chopped
  • 1 tablespoon dill, chopped
  • 1 tablespoon fresh lemon juice
  • 1/4 cup chopped fennel or green spring onion
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • salt & pepper to taste
  • oil to cook with (we recommend ghee)

Note

When choosing salmon, make sure you buy Alaskan pink salmon, sockeye, or red salmon. This ensures the salmon is wild salmon from North American waters. The Alaskan salmon fishery is one of the most well-managed, safe and sustainable fisheries in the world. So as long as your salmon is wild-caught, it's almost always an ethical choice.

How to make them

  • Dice the parsley and dill
  • Drain the salmon and add everything into a bowl (except the cooking oil) and mix well
  • Using a 1/4 cup measuring scoop, make about 9 patties and place on a plate ready to cook
  • Add a small amount of oil to your frypan on a low to medium heat
  • Cook each pattie for around 4 minutes each side. If it does not flip easily, cook for a little longer until it is crispy and try again
  • Rest on a plate or rack for a few minutes then serve 

A few tips

  • Substitute the fennel / spring onion for regular onion if desired
  • Double the recipe for 18 patties - that's 9 lunches ready to go!
  • You can make your own nutrient-rich fermented veg as a scrumptious side dish with these kits
